CRAZY GRANNY’S CHICKEN POT PIE – THIS LOOKS REALLY GOOD

Chicken Pot Pie
Original recipe:
3 whole (6 split) chicken breasts, bone in, skin on
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
5 cups chicken stock, preferably homemade
2 chicken bouillon cubes
12 tablespoons (1 1/2 sticks) unsalted butter
2 cups chopped yellow onions (2 onions)
3/4 cup flour
1/4 cup heavy cream
2 cups medium-diced carrots (4 carrots), blanched for 2 minutes
1 10-ounce package frozen peas (2 cups)
1 1/2 cups frozen small whole onions
1/2 cup minced fresh parsley
Directions
Preheat the oven to 375 degrees F.
Place the chicken breasts on a sheet pan and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken.
In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a large pot or Dutch oven, melt the butter and sauté the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and the heavy cream. Add the cubed chicken, carrots, peas, onions, and parsley. Mix well. Place the stew in a 10 x 13 x 2-inch oval or rectangular baking dish. Place the baking dish on a sheet pan lined with parchment or foil.
Put frozen biscuits on top and bake till bubbly and biscuits are done. Between 35 and 50 min. depending on oven.
This is how I make it
I boil 4 to 5 chicken breast with celery,onions,carrots to make a stock for Chicken Dumpling Soup. I up the onions to around 3cups. I don’t use the pearl onions.
I use a large can of broth to make sauce. I think it’s right at 5c or a little over that.
I also put in some celery (around 1 1/2c) with the onions.
After I blanch the carrots I put them in the pan with the onions for a few more min. Make sure you blanche them, if not, they will still be hard.

I use the Pillsbury frozen biscuits for the top, or you could use puff pastry or pie crust, whatever you want.

  4. This looks really good, Granny. I think I could handle this. I have used the refrigerated biscuits to top a chicken casserole before. I make and freeze my own chicken stock so I should be good to go. Thanks for sharing it.

    • Thank you Ladybug. I used the frozen biscuits because of the time in the oven. They also have mini biscuits. I have used those to. More biscuits for everyone then.

      • I have never used the frozen biscuits but now I am going to. I would always cook the refrigerated biscuits separate and then throw them on top the last few minutes. It never occurred to me to use frozen ones. I told y’all that I am not a great cook. My skill set lies elsewhere ;) .

      • Thanks. I hope you two like it. Let us know the changes you make. My daughter is allergic to just about everything now and has to be on a rotation diet so she doesn’t become allergic to more foods.

          • Granny, is your daughter gluten-intolerant as well?

            The adjustments I am making are:

            - no butter
            - pearl onions
            - skim milk
            - no peas, using diced yellow zucchini instead

            - instead of wheat flour, I used chick-pea flour

            The house smells wonderful.

            I’m making low-carb-gluten-free-low-fat biscuits. They are in the oven, but I have no idea if they will turn out.

            I will let you know if they do turn out okay.

          • She can have gluten. But is allergic to peas,shellfish,dairy, broccoli, peanuts, which means just about everything. Anything with the slightest hint of peanuts in it or even being in the same room as a open jar of peanut butter causes a severe reaction. She has had to go almost completely vegan and organic but she eats meat.

        • You ladies are far more accomplished chefs than I am. I was in awe just reading all of the substitutions, etc. Chick-pea flour? I didn’t even know there was such a thing :) .

          Manbug is allergic to corn, soy, dairy, and melon. BUT he has been on allergy shots for 3 years and can eat just about anything now. We are very fortunate that it is under control these days.

          • LB I had to learn how to cook at a very young age. I can’t eat anything with gluten, so I’ve had to experiment with different types of flour to accommodate this.We also eat low-carb so I do a lot of experimenting in the kitchen.

        • I’ve always wanted a CPP recipe, as my daughter loved them when she was little but they don’t have them in NZ… now when I have one to try, she’s gone vegan on me :( , sorry about your girls allergies, my husband is allergic to half the planet

      • My sister-in-law developed a lot of food allergies as well. It’s such a challenge. My only problem is gluten and I also can’t have food rich in iron, but it’s been fairly easy to get around all that.

        When I make homemade pasta, lasagna, gnocchi, pizza, I have to make a different meal for myself, but after not having it for so many years, I don’t really miss it.

        But I have been experimenting with different flours and some are good and some I bomb at. Not having pies and cakes, is no biggie for me, my husband is the one with the sweet tooth. LOL I’m just a dark chocolate addict, and I found some great organic, gluten free chocolate that I enjoy once in a while.

    RM, we eat low carb as well and for me it has to be gluten-free, so I’m going to attempt to make the topping with Almond flour which is great for low carb baking.

    I don’t know about biscuits though, I’ll attempt it, if it works, I’ll share the recipe, if not, the pot pie sounds delicious without the biscuits.

    I always broth in the freezer, I never have peas, call me a Pea-Nazi too.

LOL…tonight I’m feeding the mister leftovers and going out with our daughter and two of her girlfriends to watch Magic Mike. There’s a little theater in Healdsburg that serves wine and crepes with your movie–sounds like a perfect girls night out.

    What’s funny is that Sarah and her buds have been texting back and forth about getting together for this, and one of her friends said her mother would NEVER go to a movie like THAT…which is when Sarah texted back and said it was her mother’s idea. My rep is solid.

      Have a great girls nite out. I almost had my mom talked into going,but she says she will wait till I get the DVD and watch it here in our movie room. We have 110in screen. My hubby is a movie and music geek. The last movie I saw in the theater was Monsters v. Aliens with the grandson. Otherwise we just wait for them to come out on DVD and watch them at home.

  10. I will take all of the extra biscuits leftover from you low-carb peeps. I LOVE carbs! I run so that I can eat more carbs. Did you know that in prep for a big race a lot of experts advise that you should transition your diet to 90-95% carbohydrates? I run races just for those last few days of carbo-loading :) .

    Manbug is cooking and I am supposed to be doing something productive. For some reason, I don’t think this is it ;) .

          • At the risk of being too serious and understanding– I think people suck too. I tend to hold people to pretty high expectations and more often than not they screw the pooch. I often have to thin the herd to preserve my sanity (my sanity is an illusion I like to embrace :) ). It sucks and people suck, but it is a necessary evil if you don’t want to become like those shitty friends.

            That being said– there are a few people who have been in my life for a long time and know and accept me warts and all (not genital warts– that shit’s permanent). I treasure those people and hold them close (the chain is long enough so that they can reach the water bowl).

            Do you think I have a future writing self-help books (not about masturbation ;) ).

I know I wear those damn pink glasses a lot, but I still believe the majority of people are good, some just are action-challenged and they don’t know how to let the goodness come out of their system. It’s like their constipated with positivity and take a negative laxative.

        Okay, that’s a sucky metaphor, but I’m sure you know what I mean.

I may plan it for next week sometime…..and for biscuits I’ll use the Jiffy Mix which I used for dinner tonight and turned them into Cheddar Biscuits which my hub loved and I managed to eat just one. I have to watch the calories and exercise daily in order to keep the pounds down…..and off……..

    • Granny, the recipe was a big hit tonight, and it worked well with my substitutions. Worked beautifully with the chicken we were already roasting. We had a spring mix salad with it.

      I made some biscuits, but I don’t really think you can call them biscuits, as they were light and fluffly. They were low-carb, gluten free and low fat, and I’m glad they turned out, now I can experiment more with the chick pea flour.

      I’ve made homemade pasta with this flour, which is low carb and gluten-free and it tastes awesome, just never baked with it, so thanks for inspiring me to do that.
